| Comment | It is said this pottery vessel was excavated from ancient tomb along Sefid Rud, White River running into southwest of Caspian Sea dated about three thousand years ago. Meat dishes such as kebab of mutton, beef and chicken are well known as Persian cuisine today but deep fry of fish called mahi sefid meaning 'white fish' is also popular. The species of fish for cooking is different in regions. Carp and snakehead mullet are cooked in Caspian region but in the region of Teheran, the capital of Iran, rainbow trout is popular. |
